大熱天時㷫烚烚,即刻踩入黃金海岸嚟個夏水禮,同陽光海灘玩遊戲。我知!齋玩水唔足夠引你山長水遠入屯門,近近哋去三聖海鮮街大擦海鮮餐又點睇?咪以為普通貨仔,活生生阿拉斯加長腳蟹,凍食、花雕蛋白蒸加蟹蓋炒飯一蟹三食,好味到 Ice都話:「我愛長腳蟹呀!」

香港 N咁多個沙灘,點解要入黃金海岸先?水清沙幼?確實係,但唔係 Point囉,因為多女睇?個個沙灘都咁上下 o架啦!黃金海岸勝在有度假 Feel,附近嘅黃金廣場裝潢勁有歐陸色彩,假日有唔少首飾、算命同畫人像畫等特色攤檔,不過拍攝當日係周一,搞到 Ice無機會 Shopping。
雖則閒日,沙灘依然人氣鼎盛,有老外扮粟一燒嘆日光浴,有通沙灘跑嘅細路仔兇攝影師:「做乜偷望我呀?」有拍拖情侶互搽太陽油羨煞旁人,當然仲有 Ice玩水大派冰淇淋畀一眾麻甩仔消消暑。
追趕跑跳碰,流汗流個飽,係時候醫肚, Ice話要帶大家去三聖海鮮街食海鮮。你無聽錯,我無寫錯,屯門的確有條海鮮街,規模雖然及唔上西貢,但水準拍得住流浮山!由黃金海岸出發,行路十五分鐘即到,打的唔使跳錶。到達三聖海鮮街,一排八、九檔任你揀, Ice睇中「忠仔記」,因為海鮮選擇夠多;一問有乜好介紹?老闆立即抽起大大隻阿拉斯加長腳蟹:「唔係冰鮮貨,活生生曉行曉走,池水 Keep住喺 3℃,游水游得不知幾開心。」唔係親眼見都唔信佢咁把炮!

買完海鮮,即到幾步之隔嘅「廣東名門」加工,呢間舖連邵逸夫都幫襯過,總廚葉啟湖師傅炮製長腳蟹三食,由淡到濃,先有蟹腳凍食,入口啖啖肉,味道介乎龍蝦同肉蟹之間,肉質結實超 Juicy,嗰種超鮮甜味,冰鮮貨真係差九條街,師傅畀貼士:「揀大唔揀小,蟹腳幼身部份最甜,海水味最濃。」再有花雕蛋白蒸蟹身,陣陣酒香撲鼻,酒香完全滲入蟹肉,絲絲蟹肉配滑溜蛋白,口感非常 Match。最後連蟹殼都唔好嘥,齋食膏唔過癮,一於整個蟹蓋炒飯,蟹膏鮮味夾馬友茸鹹香, Ice食到一粒飯都無剩!

■芝士脆皮焗龍蝦

辣酒通常煮花螺,師傅反傳統嚟個石鍋辣酒煮生蠔,用二十二種配料炮製辣酒,除最大路嘅玫瑰露,仲加入清酒,味道更香,生蠔比螺更加吸味,所以特別香辣,分明係向你味蕾下戰書。
鮑魚仔多數用薑葱蒸,好食係好食,不過悶咗啲囉,胡椒薑葱鮑魚就有新意得多,大連鮑魚比較軟身,先蒸至半生熟,再用黑白胡椒同薑葱燜焗,胡椒微辛惹味又唔會掩過鮑魚鮮味, Ice畀夠十個 Like。有鮑魚又點可以無龍蝦,芝士脆皮焗龍蝦配法國芝士醬,芝士係濃,但唔會濃過頭,迎合番香港人口味,龍蝦開邊焗至脆皮,肉質結實鮮甜。嫌一般蒜茸蒸蝦悶的話,可試試上湯開邊焗海蝦配雙麪皇,海中蝦用上湯焗過,更有效帶出鮮甜,點睛之處在於配雙面黃脆面,脆卜卜唔會太硬,非常香口。

「容龍海鮮酒家」由 1939年開業至今,出品絕對經得起時間考驗,唔少名人明星都係座上客。
呢間係 2011年米芝蓮星級酒家,位置自處一角,真正背山面海綠樹成蔭;唔係講笑!真係聽到雀仔唱歌,對出有無敵海景,唞啖氣都清新過人,有靚景送飯自然胃口大增。海鮮都係來自三聖海鮮街,即叫即有專人運到,如果唔想等,大可以自己揀定靚海鮮入場,自有專人加工,想點食,開句聲就得嘞。
芸芸靚海鮮,我首推招牌菜膏蟹糯米飯,打開竹蓋,香味直接刺激胃液分泌,一斤重頂角膏蟹,蟹膏真係塞到爆,好似食極都唔完,蟹汁完全滲入糯米飯,伴住勁多蒜茸,鮮味提升到極點,望埋價錢,嘩!$280足六位用,認真大件夾抵食,唔係吹水,家陣我打緊稿都仲回味緊嗰種鮮味。
星洲胡椒蟹又係正,師傅親自到新加坡取經,學點樣調校秘製汁醬,胡椒惹味得嚟唔會搶過蟹肉鮮味。另一招牌菜有辣酒煮花螺,舀一舀,濃濃玫瑰露撲鼻而來,跟爐上,邊吃邊滾更入味,師傅話:「特登選用中等 Size螺肉,太大隻會韌,辣度可以自己選擇,點菜嗰陣講埋就得嘞。」我穩陣,選中辣,或者我唔食得太辣,真係辣到飛天,叫得呢道菜自己三思呀!另一道煙鯧魚有三十幾年歷史,出面好少地方食得到,鯧魚先醃一晚再煙熏,工序都幾複雜吓,煙熏香味好出,用嚟送飯最好。想食香口嘢,芝士大蝦一定唔可以錯過,大花蝦肉質結實,加上焗到脆卜卜嘅芝士,口感一流![節錄...]
